It may have taken me more than a year, but I’ve finally shared all five of the fantastic crock pot dinners I searched the internet high and low for. I still think it can be hard to find really flavorful crock pot meals, but I fully stand behind the five I’ve shared! Now you have enough to make it through every weekday using your crock pot.
This last one is a popular recipe from A Year of Slow Cooking. I took it to a friend once, and she immediately texted me saying something along the lines of “HOLY YUM!” It only take a couple of minutes to throw together; in fact, I think it’s the simplest recipe in my series. But it has a bold flavor and the perfect amount of spice. I also love how it’s falling apart by the end.
Crock Pot Barbecue Chicken
4-5 pieces boneless skinless chicken breasts
1 bottle BBQ sauce
1/4 c vinegar
1 tsp. red pepper flakes
1/4 c brown sugar
1/2 – 1 tsp. garlic powder
Mix BBQ sauce with all ingredients listed under it. Place chicken in crockpot, covering with sauce. Cook on LOW for 4-6 hours.
Tips:
- Frozen chicken breasts will work, but I prefer to put them in defrosted because the sauce is slightly less watery at the end.
- If you are spice-shy, downgrade the red pepper flakes. (But we love the heat from the full amount!)
- Serve with brown rice and a side salad…or toasty bread and some steamed veggies…or twice baked potatoes and some fruit. It’s such a versatile dish and has become my go-to barbecue chicken. Enjoy!
