“Apple Week” is turning into “Apple Two Weeks!” Such is my life right now, and that’s okay. Hopefully you agree!
I love homemade applesauce and am not afraid to make it taste more like a dessert than a healthy snack. (Thank you, brown sugar!) Roasting the apples in the oven adds extra depth to the flavor, as does the bit of apple cider you roast them in!
7-8 apples – a combination of sweet and tart
1/4 cup apple cider
3/4 tsp. cinnamon
1/4 tsp. ground cloves
dash of salt
1/4 – 1/2 cup brown sugar
Preheat oven to 375. Peel, core, and cut the apples. Place in a baking pan. Drizzle apple cider over the apples. Sprinkle on the cinnamon, ground cloves, salt, and brown sugar. (If you think you like yours on the less sweet side, start with a 1/4 cup brown sugar and add more if needed after you’ve mashed the apples and tested it.) Stir to combine. Cover tightly with foil, and roast in oven for 20 minutes.
Remove the foil, and raise the oven temp to 475. Roast for another ten minutes, or until the apples are soft and starting to caramelize.
Mash the apples (using a potato masher or a food processor/blender) to whatever consistency you like. Add a bit more apple cider if you happen to need more liquid. Sprinkle each serving with a bit of brown sugar, and enjoy warm!

I’ve never considered roasting the apples first. This might be revolutionary in my kitchen, Erica! I have a favorite applesauce recipe but it calls for the usual stovetop cooking. We’re planning a trip to the orchard this weekend, so I will be trying your trick for sure. Thanks for posting this!
